To complete Jack’s dream, Chardonnay became the third varietal to complete the lineup.
Christian with a long history of making world class chardonnay introduced Jack to the Santa Rita Hills in Santa Barbara. The Santa Rita Hills are renowned for the white sandy soils rich with diatomaceous earth deposits (ancient decomposing sea bed) that lend to crisp acidity, mineral and bright fruit flavors of apple and pear. These are the soils similar to the classic region of Chablis and capable of growing world class.
