Ming’s Well, Paso Robles

Jack & Christian’s quest began with Jack’s love for Cabernet Sauvignon. They began with the prestigious Grosser Kressor Vineyard in the Adelaida District of the West Side of Paso Robles. This is one of the oldest Cabernet Sauvignon vineyards in Paso Robles.  The Adelaida district has the soil, elevation, and climate (what the French call “terrior”) to produce world-class Cabernet Sauvignon of grace and elegance.  2017 was the premier Vintage and produced a wine of great depth, color, and sophistication. Future vintages expanded to include the production of Malbec & Petite Verdot adding to the sophistication of the Cabernets & subsequent blends.

Varietal: 100% Cabernet Sauvignon, no filter, no fining
Vines: 50-year-old Cabernet Sauvignon vines (some of the oldest on the West side of Paso) Soils: Calcareous

Tasting Notes:
On the nose: Bright nose of bright red & blackberry fruit, with hints of tobacco & cream.
On the palate: Rich red berry fruit, Plum, and cherry dance with bright acidity.  Darker fruit enters as the structure builds with silky tannins on the mid-palate. Red berry laced with currant, cassis, and tobacco spice trail into a creamy, toasted oak finish.

Winemaker comments: This is a classic West Side Cabernet Sauvignon from Paso Robles.  Its character is feminine and graceful in style with the backbone and size of pure Cabernet Sauvignon.  Its bright fruit and elegance come from the calcareous soils and vine age.  Stellar!!

Vines: 50-year-old Cabernet Sauvignon vines (some of the oldest on the West side of Paso) Soils: Calcareous

Tasting Notes:
On the nose: Deep red & blackberry fruit, cherry,  plum, earthy with hints of crème brûlée
On the palate: The mouth leads with rich red berry fruit of plum and cherry and turns dark and earthy. The rich essence of the forest floor fills the base of the palate while the top dances with blackberry, currant, and cassis laced with mocha and spice. The sizable structure present on the mid-palate with silky tannins shows the immense size of the wine.  The flavors’ top and bottom build and are bound together in a velvet mouthfeel.  This cacophony of fruit & spice is long on the palate and begins to trail into a sexy toasted oak finish laced with hints of mocha crème brûlée.

Winemaker comments: A great representation of this classic, old vine cabernet vineyard from the West Side of Paso.  The addition of the Malbec really rounds out the bottom end of the wine bringing more dimension and size to the wine.  Deep rich flavors compliment all the bright red berry fruit of the Cabernet.  Epic Steakhouse monster dressed in a tuxedo and ready for dinner!
